Lemon Potatoes.

Has anyone got the recipe for Lemon Potatoes? I love these when we are in Stoupa but I do not know how to make them. Thankyou.

Lemon potatoes done in the oven or in a casserole ?

Lemon potatoes done in the oven goes like this:

There are lots of variations but the basic recipe is as follows:
Peel potatoes and chop into wedges. ( thick cut ) - or halved / whole small potatoes
Place in a deep roasting tin.
Sprinkle liberally with olive oil. ( 150ml at least )
Pour over juice of 1 lemon ( uk ), ( 2 lemons in Greece )
Sprinkle liberally with salt, pepper and oregano.
Carefully add water to the side of the roasting tin until the potatoes are nearly covered with water - just the top edges showing.
Roast in a very hot oven - pre-heated to 230oC - for about 1-1.5 hours - turn potatoes over at least once.
Avoid adding more water if at all possible.
Potatoes should be ready when all the water has gone.
Practice makes perfect........
